Over the past seven months, AJ has lost an incredible 75 pounds. His approach wasn’t about giving up food or following a complicated diet. Instead, he focused on eating satisfying, wholesome foods and being more mindful about what he puts on his plate.
Some of AJ’s go-to foods include: chickpeas, fresh salads, smoked salmon, grilled salmon, chicken, burgers, homemade pickles and sauerkraut, fresh fruit, and plenty of other simple, flavorful foods. Rather than thinking about what he couldn’t eat, he focused on foods he genuinely enjoys that also leave him feeling satisfied.
And yes—burgers are still on the menu! AJ’s journey is a great reminder that making healthier choices doesn’t necessarily mean giving up the foods you love. It’s about balance, quality ingredients, and finding an approach that works for you.

#From New York to New Rochelle: A Bite of Burger History
Few foods are more American than the hamburger—but the story behind it goes back much further than the drive-thru.
The hamburger’s roots can be traced to Hamburg, Germany, where chopped and seasoned beef became known as “Hamburg steak.” By the late 1800s, versions of Hamburg steak were appearing on menus in the United States. Eventually, someone had the brilliant idea to put that beef between bread, creating a meal that was inexpensive, portable, and, most importantly, delicious.
New York Helped Make the Burger an Icon
New York has always had a special relationship with the hamburger. From old-school diners and luncheonettes to legendary taverns and modern burger restaurants, New Yorkers have spent generations putting their own spin on the classic.
That tradition extends north into Westchester County, where burgers have long been part of the local food scene. Places like Piper’s Kilt in Eastchester, a neighborhood fixture since 1979, and Horsefeathers in Tarrytown, serving Westchester since 1981, helped make the big, juicy tavern-style burger a local favorite.
Westchester’s love of classic American roadside food goes back even further. Walter’s Hot Dogs in Mamaroneck has been serving customers since 1919, showing just how deep the county’s love for simple, grilled American classics runs.

Our burgers start with fresh chopped meat, never frozen, char-grilled to order and served on our **homemade artisan garlic rolls**. Then we have some fun with them. From our **Fresh Mozzarella Burger** with house-made mozzarella, tomato and arugula to our Surf & Turf Burger and rotating specialty creations, we believe a burger can be a classic and still be creative.

Inspired by an Icon: The Story Behind AJ’s Classic Slider
Sometimes the best food doesn’t need to be complicated.
Our Classic 1/4 lb. Smashburger at AJ’s Burgers was inspired by one of the most legendary little burgers around: White Manna in Hackensack, New Jersey.
A New Jersey Burger Legend
White Manna’s story dates back to the 1939 New York World’s Fair, with its Hackensack location opening in 1946. Over the decades, the tiny burger joint became famous for its signature sliders—fresh beef cooked on the griddle with onions and cheese and served on a soft potato roll. It has since become a local institution and has even been featured on shows including Diners, Drive-Ins and Dives and Anthony Bourdain: No Reservations.
There’s something special about watching a simple burger hit the griddle with a pile of onions. No fancy tricks—just beef, onions, cheese and a soft roll coming together the way they have for generations.
Our AJ’s Take on the Classic
We loved that idea, so we brought a little of that old-school slider magic across the Hudson and gave it the AJ’s treatment.
Our 1/4 lb. Smashburger starts with fresh ground beef, smashed with sweet onions right on the grill, then topped with melted cheese, pickle and ketchup and served on a soft Martin’s Potato Roll.
It’s simple, juicy, oniony and nostalgic—the kind of burger that reminds you why classics become classics in the first place.
White Manna provided the inspiration. AJ’s made it our own.

Cooking with Care: Why AJ’s Burgers Chose Better Oils
At AJ’s Burgers in New Rochelle, we believe great food should taste amazing and make you feel good. That’s why we made an important change in our kitchen: we no longer use seed oils. Instead, we proudly cook with beef fat (tallow), avocado oil, and extra virgin olive oil—because your health matters to us.
Many common seed oils are highly processed and refined using chemicals and high heat, which can strip away nutrients and create unstable fats. When heated, these oils can oxidize easily, contributing to inflammation and other health concerns. We didn’t feel comfortable serving ingredients that don’t align with how we care for our community.
Beef tallow, avocado oil, and extra virgin olive oil are time-tested, minimally processed fats. Beef tallow is a traditional cooking fat that’s stable at high heat and full of natural flavor. Avocado oil has a high smoke point and contains heart-healthy fats, while extra virgin olive oil is rich in antioxidants and known for its anti-inflammatory benefits.
This switch wasn’t about following trends—it was about doing what’s right. From our burgers to our Italian dishes, every decision we make in the kitchen is guided by quality, transparency, and care for our customers. Better Bread
At AJ’s, we believe that better food starts with better ingredients—and that includes the bread we make right here in our kitchen.
Our homemade bread is made with non-bromated, unbleached, enriched flour. What does that mean?
Non-bromated means our flour is made without potassium bromate, a flour additive traditionally used to strengthen dough. Unbleached flour is allowed to age naturally rather than being chemically bleached to speed up the process. And enriched flour has key nutrients, such as iron and B vitamins, added back after milling.
For us, it’s about being thoughtful about the ingredients we use and keeping things simple. We take the extra time to make our bread **in-house**, so we know exactly what goes into it—and, just as importantly, what doesn’t.
From our burgers to our sandwiches, we think you can taste the difference that fresh, homemade bread makes.
